Besides the cooler weather and festive activities, autumn flavors are one of the best parts of October! Plenty of fruits and veggies come into season during the fall months, which makes for a great opportunity to “spice” up your plate with brand new recipes.

Crock-Pot Maple Cinnamon Steel Cut Oatmeal

(Serves 8 / Cook and Prep Time: 4 hours 5 minutes)

Ingredients:

  • 1.5 steel cut oats
  • 6 cups almond milk, unsweetened
  • 1/3 cup  – 1/2 cup maple syrup
  • 1 vanilla bean
  • 1 teaspoon cinnamon
  • 1/8 teaspoon sea salt

Instructions:

  • Place all ingredients in a crock pot.
  • Turn to high and cook for 4 hours or turn to low and cook for 8 hours.
  • Once your oatmeal is done cooking, stir with a wooden spoon or until
    it has become thick and well combined.

Warm Cinnamon Apple Crisps

(Serves 2  / Cook and Prep Time: 2 hours 2 minutes)

Ingredients:

  • 5 apples
  • 2 teaspoons cinnamon
  • 3 teaspoons brown sugar

Instructions:

  • Preheat oven to 200 degrees Fahrenheit.
  • Thinly slice apples with a mandoline. On a greased baking sheet,
    arrange apple slices so they aren’t overlapping.
  • In a small bowl, combine sugar and cinnamon. Sprinkle on top of apple crisps.
  • Bake on the top rack of your oven for 2 hours until chips are dry and crisp.
  • Remove from oven and let them cool completely. Store in a zipped plastic
    bag for up to 3 days to stay crispy.

Cumin-spiced Mashed Sweet Potatoes

(Serves 8 / Cook Time: 90 minutes)

Ingredients:

  • 6 medium sweet potatoes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne
  • 1 teaspoon salt
  • 1/4 cup pepitos

Directions:

  • Preheat oven to 400 degrees Fahrenheit.
  • Place sweet potatoes on a pan (don’t poke them), and bake for an
    hour or until soft.
  • Allow to cool for 10 minutes before slipping off the skins.
  • Transfer a sweet potato to a glass bowl. Add spices and salt, and
    mash with a fork or potato masher until smooth.
  • Top with pepitas and serve immediately, or it can be store in
    an airtight container in the fridge (just reheat before serving).
